Instant Pot Pork Carnitas

We’ve used this recipe many times for a quick version of carnitas that comes out delicious. Adjust the peppers to change spice level. I usually shred and crisp it directly in the pressure cooker so I don’t have to get another pot dirty.
For Serving
- Corn Tortillas
- Chopped Cilantro
- Diced Red or White Onion
- Salsa Verde
- Lime Wedges
Use with warmed corn tortillas and top with cilantro, white onion, and salsa verde.
Baking Powder Biscuits & Sausage Gravy

Mix dry ingredients, cut in shortening. Mix in egg and milk. Roll out 1/2 inch thick. Cut. Bake 10 minutes at 450° until light brown. Optional – brush with milk before baking, helps browning.
Sausage Gravy
- 1 lb. Sausage
- 3 to 4 Tbsp. Flour
- 1 1/2 to 2 Cups Milk
Brown 1 lb. Sausage. Then add 3 to 4 tbsp flour. Mix well. Then add 1 1/2 to 2 Cups milk, stirring constantly. Boil 2 minutes. Add more milk if needed. Use with baking power biscuits or canned biscuits.
Breakfast Pizza

Preheat oven to 375°. Cook sausage and drain it. Press rolls onto pizza pan. Press with finger to seal all edges flat, and press up the edges of the pan. Sprinkle with sausage, hash browns, and cheddar cheese. Combine eggs, milk, salt, and pepper with a fork. Pour into crust. Sprinkle with parmesan cheese. Bake at 375° for 25 minutes.
Baked Beans

I’ve never measured any of this. I just make it. Experiment with whatever you like to season it. Drain all of the liquid from the can of beans. Mix all ingredients and heat to a boil in a saucepan. Stir often or the beans will stick ot the bottom of the pan and burn. Lower heat to low, cover and simmer at least 15 minutes. The longer it simmers the more flavor will soak in.
Cheesy Potatoes

Mix all together, add salt and pepper to taste. Bake at 350° 1 – 1 1/2 hours.
Baked Mashed Potatoes

Quarter and boil potatoes. Mash when done. Add remaining ingredients. Can refrigerate overnight. Bake at 350° for 45 minutes. Can garnish top with paprika and parsley before baking.
Scalloped Potatoes

Melt margarine in saucepan. Add flour and mix well. Add salt and pepper. Then add 3 more cups of milk to make sauce. Boil 2 minutes. Put layer of potatoes in casserole dish, then add a layer of ham and onions. Spread with half of the sauce. Repeat layers and sauce. Cover and bake 1 hour at 350°. Uncover and bake 15 or more minutes until done.
Chili

In large skillet, cook and stir meat, onion and green pepper until meat is brown and onion is tender. Drain off fat. Sti in tomatoes (with liquid) and remaining ingredients except kidney beans. Heat to boiling. Reduce heat; cover and simmer two hours, stirring occasionally. Stir in kidney beans; heat through.
Cabbage Salad

Dressing
- 1 Cup Oil
- 4 Tbsp. White Wine Vinegar
- 1 pkg. Soup Seasoning
- 1 tsp. Salt
- 4 Tbsp. Sugar
Brown almonds and sesame seeds for five minutes. Add noodles from soup mix (dry, break up). Bring dressing ingredients to a boil. Simmer five minutes. Chill. Mix greens and dry ingredients together and add dressing just before serving.
